Oh do I have a good one for you guys today! This easy vegan jambalaya recipe takes me back to my childhood when my mom used to make jambalaya all the time. I can still here her saying "it's spicAAyyy". We ate jambalaya a lot growing up, because it's affordable, and my family is hug (7 of us(5 out of 7 of us are above 6' tall, so yeah... we eat a lot)), so we needed recipes that could feed an army. There are certain foods that I got really sick of, and honestly can't eat them anymore. I'm talking to you lunch sandwiches. Jambalaya was never one of those foods.
When I first wet vegan this was one of the first recipes that I veganized, because it was so easy. All you have to do to make an easy vegan jambalaya recipe is swap out the meat for vegan meat, and use vegetable broth. It's that simple! It honestly still tastes the exact same, and it is so much healthier.
Can I make homemade vegan sausage for this?
Of course! You know me, I always encourage you to make it the way you will enjoy it most. And I love homemade anything. The only reason I went for store bought vegan meat for this recipe is because I wanted it to be an easy vegan jambalaya recipe, because I need more easy vegan recipes on my blog. Can I make this easy vegan Jambalaya recipe gluten-free?
Yes! The vegan sauasage has gluten, but besides that this recipe is gluten-free, so all you need to do is sub that out and you're good to go! I would recommend looking around your local grocery store for gluten-free vegan meats, they're pretty common. If you are looking for something with a meaty texture that is not processed, I would recommend using Texture Vegetable Protein (TVP). I have been hooked on TVP recently. It is the perfect addition to basically every recipe, and it is made from just soy! Speaking of soy, you could totally use tempeh in this recipe for a gluten-free substitution!

- Red onion
- Jalapeño
- Garlic
- Zucchini
- Diced tomatoes
- Vegetable broth
- Smoke paprika
- Chili powder
- Basil
- Thyme
- Oregano
- Kidney beans
- Liquid aminos
Easy Vegan Jambalaya
Equipment
Ingredients
- 1 ½ cup dried brown rice
- 1 package plant based meat of choice
- 2 stalks celery
- 1 red onion
- 1 bell pepper
- 1 jalapeño
- 1 zucchini
- 5 cloves garlic
- 1 can unsalted diced tomatoes
- 2 cups vegetable broth
- 1 can unsalted kidney beans
- 2 teaspoon liquid aminos
- 1 ½ tablespoon chili powder
- 1 tablespoon smoked paprika
- 1 teaspoon basil
- 1 teaspoon thyme
- 1 teaspoon oregano
Instructions
- Start by cooking your rice in the vegetable broth. If you have a Ninja Foodi, InstaPot, or rice cooker, use this to speed up the process.
- While the rice is cooking, sauté the onion, celery, garlic, and peppers together in a pan with the diced tomatoes.
- Once vegetables are cooked, add the vegan meat, and zucchini. Add the spices, liquid aminos, and nutritional yeast.
- Once the rice is cooked add to the pan along with the kidney beans and cook for 10 minutes on low allowing all the flavors to combine. Serve and enjoy!
