
Cinco De Mayo is coming up, so I thought it would be the perfect time to work on some vegan Mexican recipes like these vegan loaded nachos! Nachos were something I ate a lot growing up, like a lot a lot. I don't think I need to sit here and tell you why nachos are so great, because I'm pretty sure we've all had nachos. However vegan nachos on the other hand, now that's something I like to talk about.
Does this Oil-free nacho cheese melt?
Yes, and no. You see since this cheese is made from plant based ingredients and no oil it will not melt and boil like traditional cheese. The melt comes from saturated fat, which this plant based loaded nacho recipe is low in. This oil-free nacho cheese does become stretchy like traditional cheese, and tastes like regular cheese. What makes these loaded vegan nachos loaded?
Well my friends, that is completely up to you! The main recipe within this recipe is the nacho cheese, so the rest is really customizable. I love adding black olives and refried beans to my nachos. You could also add some seitan (I have a recipe in my plant based biscuits and gravy recipe) for some plant based meat. You could even level it up and add jackfruit for a chicken like topping! Ingredients for this vegan loaded nachos:
- Cauliflower
- Golden potatoes
- Psyllium Husk
- Miso paste
- Nutritional Yeast
- Rawnice Yellow Curcumin powder "NATURALVEGAN15"
- Chili powder
- Garlic powder
- Tomato
- Onion
- Bell pepper
- Cumin
- Cilantro
- Avocado
Vegan Loaded Nachos
Ingredients
For the Cheese:
- 1 head cauliflower
- ¼ cup nutritional yeast
- 2 teaspoon psyllium husk
- 1 teaspoon miso paste
Nachos:
- 1 bell pepper
- ½ onion
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 tomato
- 1 avocado
- cilantro
- lime
- chips of choice
- 1 15.4oz can black beans
Instructions
- Steam/pressure cook your cauliflower and potatoes until smooth.
- Set oven to preheat to broil (550).
- Once steamed, add to a high speed blender with remaining cheese ingredients and blend until smooth.
- Chop the onion and bell pepper and saute with water and spices.
- Assemble nachos on a baking sheet with nacho ingredients and cover with cheese. Place in oven and broil 5-10 ingredients. Top with tomato, avocado, and cilantro. Enjoy!
