Cinco De Mayo is coming up, so I thought it would be the perfect time to work on some vegan Mexican recipes like these vegan loaded nachos! Nachos were something I ate a lot growing up, like a lot a lot. I don’t think I need to sit here and tell you why nachos are so great, because I’m pretty sure we’ve all had nachos. However vegan nachos on the other hand, now that’s something I like to talk about.
Does this Oil-free nacho cheese melt?
Yes, and no. You see since this cheese is made from plant based ingredients and no oil it will not melt and boil like traditional cheese. The melt comes from saturated fat, which this plant based loaded nacho recipe is low in. This oil-free nacho cheese does become stretchy like traditional cheese, and tastes like regular cheese. I love making variations of this cheese for all kinds of recipes. Some of my favorite recipes with homemade vegan cheese are:
and more! I put out new recipes every Tuesday and Thursday, so make sure you subscribe to my email list so you never miss when a new recipe drops!
What makes these loaded vegan nachos loaded?
Well my friends, that is completely up to you! The main recipe within this recipe is the nacho cheese, so the rest is really customizable. I love adding black olives and refried beans to my nachos. You could also add some seitan (I have a recipe in my plant based biscuits and gravy recipe) for some plant based meat. You could even level it up and add jackfruit for a chicken like topping! At the end of the day you’re the one eating it, so make it the way you will enjoy it most! Have any questions, feel free to reach out and I’ll get right back to you!
