This spicy cucumber salad is packed full of fresh vegetables and flavorful sauces. It only takes about 10 minutes to make, and it's absolutely delicious!
As soon as I saw this recipe go viral I knew I had to recreate it using clean and simple ingredients since I am a sucker for cucumber salad recipes (my Cauliflower Tabbouleh Salad and Edamame Crunch Salad are all-time favorites).

Sweet Pepper Cucumber Crunch Salad Ingredients:
This crunchy salad is the ultimate easy summer salad recipe because it's made with super simple ingredients that you can pick up at your local grocery store.
- Persian Cucumbers - Technically, any variety of cucumbers will work perfectly for this recipe. However, Persian cucumbers are great because they are bite-sized and super crunchy. You can find these mini cucumbers at any grocery store. English cucumbers are another great variety to use for this recipe.
- Sweet Peppers - You can find sweet peppers at any grocery store. They will be in a package mixed with yellow, orange, and red peppers.
- Organicgirl Romaine - Unlike the original recipe, I like to add crispy romaine lettuce to this viral cucumber salad. This adds additional dietary fiber, volume, and extra crunch.
- Chili Oil - This is probably the most unique ingredient in this salad. However, it is the most important, in my opinion. It's packed full of flavor, and the red pepper flakes give it the perfect kick. You can also use gochujang paste or any of these gochujang substitutes.
- Sesame Ginger Dressing - There are plenty of ginger sesame dressings that will work for this recipe; however, it's important to look closely at the ingredients to ensure you are making this recipe with healthy ingredients. I recommend the Braggs or Primal Kitchen dressings (both of these contain honey, so if you're a vegan who avoids honey, I'd recommend making your own or looking for a honey-free version.
- Everything But The Bagel Seasoning - You can find this spice blend at any grocery store, and they all taste the same. It's a mixture of sesame seeds, poppy seeds, garlic, and salt.
- Coconut Aminos - I like to add coconut aminos to this cucumber salad recipe because it adds a touch of sweetness and saltiness. Coconut Aminos are a lot like soy sauce or liquid aminos, however, it has a sweeter taste.

How To Make The Viral Cucumber Salad:
This cucumber salad recipe is the best because it is a simple recipe and it's so easy to make (it requires barely any cooking skills), it only takes about 10 minutes to throw together.
1. Begin by slicing the fresh cucumbers into quarter-inch slices, the sweet peppers into half-inch slices, and the romaine lettuce into 1-inch slices.
2. Add the sliced cucumbers, sweet peppers, and romaine to a large bowl.
3. In a separate bowl, combine the chili oil, sesame ginger dressing, coconut aminos, and everything but the bagel seasoning. Whisk until combined.
4. Pour the dressing mixture over the vegetables and toss. Serve immediately and enjoy!
Hint: Use a large mixing bowl to combine all the ingredients together. This recipe needs to be tossed a bit more than traditional salad recipes, so a large bowl will help control the mess.
Cucumber Salad Substitutions:
This Sweet Pepper Cucumber Crunch Salad recipe is the perfect easy recipe because you can make a handful of easy substitutions.
- Cucumber - Any kind of cucumber will work for this recipe. It calls for Persian cucumber (I recommend them because they have the best crunch), however English cucumber, traditional cucumber, or even baby cucumbers will all work great for this recipe.
- Seasoning - If you don't have everything but the bagel seasoning, you can use a combination of sea salt, poppy seeds, sesame seeds, and fresh garlic cloves in its place. Make sure to mince the garlic cloves into very small pieces.
- Coconut Aminos - You can use soy sauce, tamari sauce, or liquid aminos in its place. I recommend adding a teaspoon of coconut sugar to whatever you use to add the sweetness.
Viral Cucumber Salad Variations:
The viral cucumber salad is so great because there are endless delicious variations that you can make with it. Here are some of my favorites:
- Toasted Sesame- Add a little bit of toasted sesame oil and rice vinegar to the small bowl to give this cucumber salad recipe a flavor kick. Toasted sesame oil adds a lot of flavor, so I wouldn't recommend using more than a teaspoon of sesame oil and rice wine vinegar.
- High Protein - Add diced tofu or edamame to this cucumber crunch salad to up the protein content of the recipe.
- Citrus - You can add a splash of lime juice for added flavor.
- Extra Vegetables - You can make this delicious Cucumber Radish Salad as a delicious cucumber salad variation!
What You Will Need To Make This Sweet Pepper Cucumber Crunch Salad:
This spicy cucumber salad is the ultimate easy recipe because you don't need a lot of equipment to make it. All you will need is:
- Cutting Board - Any cutting board will work perfectly.
- Sharp Knife - Sweet peppers can sometimes be difficult to slice, so make sure to use a sharpened knife.
- Mixing Bowls - You will need a large bowl to toss the salad in and a small bowl to make the dressing in.

How To Store This Vegan Cucumber Salad Recipe:
Although I do not recommend meal-prepping this cucumber salad recipe, there are ways that you can store it to extend its lifespan.
If you are planning on storing the leftovers, I recommend using an airtight container and a paper towel. Place the paper towel at the bottom of the container before adding the salad. This will help absorb excess liquid and prevent the cucumbers from becoming soggy. I wouldn't recommend storing the salad for more than 3 days.
Top Tip:
This vegan cucumber salad recipe tastes best when it is chilled. I recommended chilling all the vegetables and ingredients before making it.
Frequently Asked Questions:
It depends on the variety of cucumber you are using. Persian cucumbers and English cucumbers are great because the skin is not bitter, therefore there is no need to peel it. However traditional cucumbers have a very bitter skin, and therefore I recommend peeling them before adding them to the salad.
