This cauliflower taco salad combines spicy and tangy flavors together to create a fun and filling summer salad. Affordable plant based protein and vegetables make this healthy salad recipe super budget friendly! It's time for all the plant based salad recipes, because summer is finally here! I love salads, and I find it so easy to eat vegetable loaded salads during the summer, who can relate? Summer is my absolute favorite season, so I am a little biased, but either way summer salads are the best! I mean, I also love winter salads and have a ton on my blog, here are some of my favorites:

Why you should make this Cauliflower Taco Salad:

I really love Mexican cuisine, because there are endless recipes that you can make. You can honestly veganize so many of these, and make them healthy. Another reason to love it, is because the volumes are insane. I am not ashamed to say I crushed this bowl single handedly. I have shared how I am a huge volume eater, so the best way for me to manage this is to eat higher volume foods. This is great for weight management, because you can fill yourself up by eating less calorie dense foods, which helps cut total calorie consumption down, which is honestly the only way to lose weight (calorie deficit).

Does this plant based salad recipe have dressing?

Since the cauliflower is is cooked with a bunch of spices, and therefore is full of flavor, and the lime and cilantro add even more, there is not really a dressing for this salad. However you could totally add the avocado, cilantro, and lime to a blender and create a creamy dressing. Honestly, when I meal prepped this that is how I ate it, I just served it like this for pictures, full transparency! You could really using any dressing you like, but I love simple foods sometimes, and I felt it already had enough flavor as is.

  • Avocado
  • Cauliflower
  • Bell pepper
  • Onion
  • Garlic cloves
  • Romaine
  • Roma tomatoes
  • Carrot
  • Pinto beans
  • Black beans
  • Cilantro
  • Lime
  • Chili powder
  • Smoke paprika
  • Nutritional yeast
  • Cumin

Equipment

  • 1 chef knife

Ingredients
  

  • 1 avocado
  • 1 cauliflower
  • 1 bell pepper
  • 1 onion
  • 2 cloves garlic
  • 2 hearts romaine
  • 1 carrot
  • 1 15.40z can pinot beans
  • 1 15.4oz can black beans
  • cilantro
  • limes
  • 1 tablespoon chili powder
  • 2 teaspoon cumin
  • 1 tablespoon nutritional yeast
  • 1 teaspoon smoked paprika

Instructions
 

  • Begin by sautéing the onion and garlic together in a pan. Add the pepper then cauliflower. Add spices and nutritional yeast and cook until vegetables are soft.
  • Chop romaine and place into the base of your bowls. Strain and rinse the beans and add. Shred the carrot and add. Top with avocado, tomato, cilantro, and lime and enjoy!
