The best part is that you can make all kinds of fun baked oatmeal flavors just like these strawberry baked oats by just swapping out a couple ingredients! I have two main goals whenever I am creating a new baked oats recipe: it needs to be healthy and it needs to be filling. I talk a lot about how I have a huge appetite in the morning. Therefore I am always a fan of a breakfast recipe that keeps me full until lunch. These strawberry shortcake baked oats did the trick!
How did I make this strawberry baked oatmeal both healthy and filling? First, it's important that whenever you are making a healthy and filling vegan breakfast recipe that you ensure it tastes good. Strawberries and cream oatmeal was always my favorite growing up, so when this idea for a delicious vegan baked oatmeal recipe hit, I knew that the flavor would be delicious. I used an almond extract, vanilla extract, and vanilla protein powder to achieve the perfect shortcake flavor without using too many ingredients. The vanilla protein powder used in this recipe is one of the key ingredients to making these strawberry and cream baked oats so filling. Oatmeal by itself is a filling food, because it is high protein and high fiber. However when you combine it with plant based protein powder you achieve a super filling and healthy vegan breakfast recipe!

Can I make this strawberry baked oatmeal in the air fryer?
One of my favorite "life hacks" is using my air fryer as an oven when it comes to single serve recipes. I use the Ninja Foodi and I can not recommend it enough. I use it almost every single day. For the longest time I stayed away from baked oats, because I do not have the patience to wait for the oven to preheat, and wait 25+ minutes for my baked oats to cook.
However I do have the patience to wait the 15 minutes it takes to make these strawberry baked oats in the air fryer. I simply place them in the machine and make my coffee and drink water while I am waiting for it to cook! To make this strawberry baked oatmeal in the air fryer, simply set to 375 and bake for 15 minutes. You may want to use a tad bit less liquid if you're planning to cook these in the air fryer. I have found the moisture doesn't evaporate as much when using an air fryer. However it's easy to get the hang of, so nothing to stress about!

I have to start my morning with a high protein breakfast. If I don't I end up being super hungry throughout the day. Therefore finding the best plant based protein powder was key. Can I make a giant batch of this strawberry baked oatmeal?
As much as I love the baked oats trend, it can be inconvenient. If you are making breakfast for more than just yourself, or if you don't have time to make breakfast fresh each morning baked oats may not be appealing to you. I have struggled with both of these over the years. However I am happy to share that these strawberry baked oats can be made to serve a group and are also meal prep friendly!
To make this baked oatmeal recipe in a larger batch, you will just need to double, triple, etc. the recipe. However I will warn you that you may need to adjust the amount of liquid to achieve the right texture. You also can not cook the larger batches in the air fryer. You will need to bake these oats in the oven if you plan to serve a crowd. It will also take a little more time to bake these strawberry shortcake baked oats in the oven, but once they're baked you're good for a couple days!

Equipment
- 1 Air fryer optional
Ingredients
- ½ cup oats ground into flour
- ⅓ cup fresh strawberries
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract
- ½ teaspoon baking powder

- 1 cup plant based milk of choice
- 1 tablespoon cashew cream cheese frosting
Instructions
- Begin by preheating your oven to 350. You can skip this if you're using an airfryer
- Blend the oats into a flour. Slice the strawberries and combine all ingredients together.
- Pour into a nonstick oven safe container and bake for 20 minutes.
