After all, my raw vegan taco salad is the most popular recipe on my website, and for good reason. These loaded nachos are complete with similar Mexican flavors and a variety of delicious textures.

Raw Vegan Nachos Ingredients:
These raw vegan nachos are great because they use simple ingredients you can pick up at your local grocery store, or order online.
Raw Nachos:
- English Cucumbers - Any variety of cucumbers will work perfectly. I love English cucumbers because they have the perfect juicy crunch and are seedless. These will serve as raw vegan "chips".
- White Mushrooms - Just like the cucumbers you can use any mushroom variety. I personally like white mushrooms best. However, baby Bella mushrooms work very nicely as well.
- Black Olives - If you strictly follow a raw vegan diet, make sure to use oil-cured black olives. However, if you simply follow a plant-based diet (or any diet for that matter), you can use canned olives.
- Red Onion - If red onion is hard on your stomach you can use white onion. I have found that a squeeze of lime juice on the onions helps them not be as hard on my stomach.
- Garlic Cloves - You can also use pre-minced garlic.
- Tomato - I love adding a fresh tomato to all my nachos. It gives the nachos the perfect refreshing flavor.
- Avocado - You can either use diced fresh avocado, smashed avocado, or creamy guac. I personally like to dice mine so the nachos don't look as messy.
- Lime Juice - I am obsessed with lime juice. I think it is such an amazing way to instantly elevate any dish.
- Sol-Ti Spicy Chipotle SuperMix- This is the key ingredient to achieving the perfect nacho flavor and it adds essential crunch. - Cilantro - No Mexican dish is complete without cilantro! I love sprinkling a little cilantro on top to complete this dish!
Cashew Cheese:
- Raw Cashew Butter - I love using raw cashew butter to make this simple vegan cheese sauce. It has the perfect creamy texture and neutral taste that makes the perfect base for vegan queso.
- Paprika - This helps to achieve the perfect nacho cheese color and adds essential flavor.
- Garlic Powder - Garlic is important when creating homemade vegan cheese to achieve the perfect flavor.
- Onion Powder - Just like garlic powder, onion powder is essential when creating a homemade vegan cheese sauce.
- Lemon Juice - Adding an acidic ingredient to any vegan cheese is crucial. This gives the cheeses the perfect hint of sourness.
- Nutritional Yeast - By far the most important to add to this cashew cheese is nutritional yeast. This is what gives vegan cheese the "cheesy" flavor. It is completely natural and loaded with vitamins!
- Sea Salt - I always recommend adding sea salt to vegan cheese. Traditional cheese is packed full of sodium, so it only makes sense to add salt to vegan cheese. Luckily you don't have to add as much so this recipe can still have a low sodium content.
- Water - You will need a splash of filtered water to get the cheese sauce to blend properly.

How To Make This Vegan Nachos Recipe:
This raw vegan nacho recipe is great because it can be thrown together in 10 minutes and it makes the perfect healthy appetizer for game day!
- Begin by making the raw vegan cashew cheese. Combine all the vegan cheese ingredients together in a blender or food processor and blend until silky smooth.
- Next, make the pico de Gallo. Dice the tomato and onion and mince the garlic. Combine them together in a small bowl with the lime juice and set aside.
- Slice the cucumber and mushroom into thin slices and assemble on a plate. Dice the avocado, slice the olives, and place them on top of the cucumbers.
- Pour the vegan nacho cheese sauce on top and add the pico de gallo mixture. Top with chopped fresh cilantro and Sol-Ti Spicy Chipotle Supermix. Serve right away and enjoy!
Hint: If you love a certain ingredient add more of it! I personally love black olives so I load them up whenever I make these raw vegan nachos!
Substitutions:
There are plenty of ingredient substitutions that can be made to this recipe if needed. Here are some of the common ones!
- Tortilla Chips - You can use corn tortillas if you're not following a raw vegan diet. If you are following a raw vegan diet, you can make your own tortilla chips or buy pre-made raw vegan crispy tortilla chips. I've linked my favorite ones.
- Veggie Chips - You can use any type of veggie chips for this recipe. I love making these Vegan Veggie Chips from Kitchen Easy Life!
- Sweet Potatoes - Another great vegetable-based chip substitute is sweet potatoes! You can cut them into rounds or you can cut them into french fries and bake them.
- Sun-Dried Tomatoes - Another great substitution is using sun-dried tomatoes in place of fresh tomatoes. I honestly love sundried tomatoes so much that I will add them in addition to the fresh tomatoes. However, you can use whatever you prefer.

Raw Vegan Nachos Variations:
There are a handful of different versions of these raw vegan nachos you can try out. Here are some of my favorites.
- Walnut-Mushroom Taco Meat - You can make the raw vegan taco meat from my raw vegan taco salad recipe and add some scoops of it to this recipe.
- Beans - If you are not a raw vegan, you can add some black beans or refried beans for added protein and flavor.
- Spicy - Add a sprinkle of cayenne pepper or chipotle paste to the cashew cheese for an added kick!
What You Will Need To Make These Raw Vegan Nachos:
Equipment can always impact how a recipe turns out. Here's what I recommend using for this recipe.
- Chefs Knife And Cutting Board - You will need a sharp knife and cutting to prepare the vegetables for these nachos.
- Mixing Bowl - You will need a mixing bowl to combine the pico de Gallo.
- Blender - You will need a blender to make the raw vegan nacho cheese sauce. I recommend using a high-speed blender.

How To Store These Raw Vegan Nachos:
Raw vegan recipes typically do not store well. I do not recommend storing these raw vegan nachos for an extended period of time.
Even though these nachos do not store well, the cheese sauce does. If you keep it in an airtight container it will keep for 1 week.
Top Tip:
I recommend chilling the cucumbers before assembling the nachos. It enhances the natural crunch.
